Cesta di pomodori biologici A basket of organic tomatoes |
Tutti
gli anni durante il mese di agosto, con l'aiuto di mia mamma, preparo
la salsa di pomodoro.
Ovviamente
i pomodori sono biologici e di nostra produzione grazie al lavoro di
mio papà, che con tanta dedizione e pazienza, coltiva nel suo orto e
produce delle verdure fantastiche.
Quest'anno
il raccolto di pomodori è stato molto abbondante e abbiamo preparato
circa 70 barattoli di salsa di pomodoro.
Abbiamo
raccolto circa 40 kg di pomodori, li abbiamo lavati, li abbiamo
tagliati a pezzi e messi a cuocere in un pentolone sulla stufa a
legna.
Dopo
circa due, tre ore di cottura abbiamo passato i pomodori al
passaverdura per togliere le bucce e i semi ancora presenti nel
liquido.
Successivamente
a questo passaggio, abbiamo riposto la salsa nel pentolone e abbiamo
fatto cuocere il tutto per un altro paio di ore.
Io
adoro cucinare sulla stufa a legna perché i cibi cuociono a fuoco
lento e hanno alla fine un sapore ancora più buono. Questo è il mio
pensiero!!!
Terminata
la cottura ho preso la salsa ancora bollente e l'ho messa nel
barattoli, poi ho fatto cuocere i barattoli a bagnomaria per
effettuare la sterilizzazione.
Voilà
abbiamo fatto la scorta per i mesi
futuri...

Pomodori dopo un paio di ore di cottura Tomatoes after a few hours of cooking |
During
the month of August my mother and I usually prepare tomato sauce.
We
use only organic tomatoes, the ones that my father grows in his
vegetable garden.
My
father loves growing vegetables (tomatoes, potatoes, carrots, salad,
celery, cauliflowers, cabbage, hot chilly peppers, etc...), and we are
very lucky to have this healthy food.
He
is teaching me how to grow vegetables... I am learning, but I am not
as good as he is.
It
was a huge harvest this year and we prepared about 70 jars of tomato
sauce.
We
picked about 40 kilos (about 88 pounds) of tomatoes, we chopped them and
cooked them in a large pot on a wood-burning stove.
After
two or three hours of cooking we used the vegetable mill to take away
the seeds and the peels as we needed only the tomato juice. We then cooked the juice for another three hours on the wood-burning stove.
I
love cooking on the wood-burning stove. I think the food tastes more
delicious that way.
It
took me around 12 hours to get this wonderful tomato sauce.
At
the end we put the tomato sauce into jars, then the jars in
hot water to seal them.
